Veggie Stir Fry

I'm feeling a little under the weather today, so I'll make this post short and sweet...or savory. It's a little how-to on a veggie stir fry.


Chop up veggies of choice, in this case:
 - onion
-asparagus
-zucchini
-snap peas
-tomatoes


Add oil to pan and heat. 
Next toss heartier veggies in first because they take longer to cook. 

TIP: you can tell when your oil is hot by tilting 
the pan, if your oil runs fast its hot.


By putting a lid over as you go you are also steaming the vegetables, retaining more nutrients.

 

Add other vegetables as you go, but make tomatoes last because they only need 
about 30 seconds! Be sure to season with salt and pepper to taste. 


Serve over rice with soy sauce, curry, or any other choice of sauce. OR add to pesto or red sauce over pasta. Personally I love this added to tomato soup! Actually now that I look at it this came out quite long. Oh well, there is a cup of wellness tea calling my name now, until tomorrow...
